Ingredients: 1 grapefruit, 4 cups arugula, 1 cup shredded carrot, 1 Tbsp fennel seeds, 1/2 cup EVOO, 1 Tbsp raw honey, 1 tsp ground mustard, 1/2 tsp ginger.
- Toss together 4 cups of arugula with one cup of shredded carrots.
- Peel one pink or red grapefruit and plate the sections on top of the salad.
- Sprinkle with one tablespoon of fennel seeds.
- In a small bowl, whisk together ½ cup extra virgin olive oil, 1 tablespoon raw honey, 1 teaspoon of ground mustard, and ½ teaspoon of ginger for a dressing to add to taste.
