I am not sure whether it was a texture thing, or the fact that I could taste all the preservatives & nasty-ness in the store-bought versions, but I couldn't ever get myself to eat it. Or any recipe that had mayo in it. Just wasn't happening. Nope. No, thank you.
UNTIL I made this paleo mayonnaise by myself at home. The delicious flavor opened up my eyes to tons of new recipe possibilities - many of which will be in my upcoming cookbook! (Cue Aladdin's "A Whole New World"....)
The extra virgin olive oil and garlic are both wonderful for cardiovascular health. And the best part? It takes less than five minutes! Boom. No excuses. So, without further ado, get a mason jar ready....
Ingredients: 1 large egg, ¼ teaspoon salt, pinch of pepper, juice from half a lemon (about 1 tablespoon), and 1 teaspoon of apple cider vinegar, 1 cup extra virgin olive oil, (1 clove fresh pressed garlic is optional).
- Combine 1 large egg, ¼ teaspoon salt, pinch of pepper, juice from half a lemon (about 1 tablespoon), and 1 teaspoon of apple cider vinegar into a bowl and whisk together. OPTIONAL: You can add a clove of fresh pressed garlic for extra flavor.
- Slowly add in 1 cup extra virgin olive oil as you continue to whisk until fully combined.
