(makes 2 servings, 5 min prep, 15 min cook)
Ingredients: 1 cup chopped sweet potatoes, 1 Tbsp organic grassfed butter or ghee, 1/4 cup water, 1 orange, 1 cup chopped dinosaur kale, 1/2 cup kalamata olives, 1/4 cup chopped walnuts, 1 tsp turmeric, 1 tsp sea salt, 1 tsp ginger, 1 tsp garlic, 1/4 cup chopped pistachios.
- Chop 1 cup sweet potatoes and place them in a pan over medium heat with 1 Tbsp organic grassfed butter or ghee, 1/4 cup water, and the juice from 1 orange. Cover the pan and allow to simmer for about 10 minutes until the sweet potatoes begin to soften.
- Add 1 cup chopped dinosaur kale, 1/2 cup kalamata olives, 1/4 cup chopped walnuts, 1 tsp turmeric, 1 tsp sea salt, 1 tsp ginger, and 1 tsp garlic. Stir until well mixed them allow to steam for another 2-5 minutes or until the kale begins to wilt.
- Plate then top with 1/4 cup chopped pistachios and serve.
The kale is a wonderful source of iron and the vitamin C from the oranges helps the body absorb more of the iron, making this dish wonderful for individuals who are anemic. The sweet potatoes from this dish also provide a great source of carbohydrates for athletes or women who are pregnant or breastfeeding. The healthy fats from the walnuts and pistachios work together to support cardiovascular and neurological health. Walnuts contain a number of neuroprotective compounds, including vitamin E, folate, melatonin, omega-3 fats, and antioxidants. Studies have even shown that walnuts help improve inferential reasoning in young adults.
