This recipe tastes amazing just like it is or you can add additional ingredients raw cacao powder, chocolate chips, strawberries, pumpkin, additional bananas, nut butter, etc. to take it to the next level. Even on those slow-to-rise mornings, the idea of making these pancakes makes me jump out of bed! Even my husband, who is very picky about his pancakes and waffles, can't resist them.
(3-4 servings, 10 min prep, 10 min cook)
Ingredients: 6 eggs, 3 ripe bananas, 1/3 cup coconut flour, 1 teaspoon gluten-free vanilla extract, 1 teaspoon apple cider vinegar, 1/2 teaspoon baking soda.
- Smash 3 bananas in a medium mixing bowl.
- Add 6 eggs, 1/2 cup coconut flour, 1 teaspoon apple cider vinegar, 1/2 teaspoon baking soda, and 1 teaspoon gluten-free vanilla extract. Beat with a hand or stand mixer until smooth.
- Pour into a large skillet over medium heat with butter or coconut oil.
