(makes 4 servings, 10 min prep + 3 hours)
Ingredients: 2 cups strawberries, 3/4 cup watermelon gherkins, 1/2 lime, 1/4 cup torn mint leaves, water
- Freeze 1 1/2 cups of strawberries for at least 3 hours.
- In a medium mixing bowl, muddle together 3/4 cup watermelon gherkins, 1/2 cup diced strawberries, the juice from 1/2 lime, 1/4 cup torn mint leaves, and 1/2 cup room temperature water.
- Divide the muddled ingredients and frozen strawberries evenly between four glasses then fill with cold water.
- Garnish with mint leaves and lime slices then serve.
Mint, cucumber, and lime combine to make this a very beneficial detoxifying tonic for the body. Additionally, cucumbers have been stated to help protect the body from heat, which is especially beneficial during the summer. Limes and strawberries are both very high in vitamin C. In fact, strawberries actually contain more vitamin C than oranges. Together the vitamin content in the limes and strawberries help support a healthy immune system.
