Ingredients: 3 avocados, 2 cups chilled coconut cream, 1/3 cup fresh mint leaves, 1/3 cup raw honey.
- In a blender or food processor, combine 3 avocados, 2 cups chilled coconut cream, 1/3 cup fresh mint leaves, 1/3 cup raw honey until smooth.
- Pour into a bowl and whip using a hand or stand mixer for 2-3 minutes.
- Pour into individual ramekins and top with our paleo granola (click for the recipe) and gluten-free dark chocolate chocolate chips.
Mint and chocolate are both very powerful antioxidants that combine to make an even more beneficial dessert. Mint has also been shown to soothe the symptoms of individuals with irritable bowel syndrome and indigestion as well as allergies and the common cold. Furthermore, studies have shown that small amounts of dark chocolate in the diet can help decrease risk of heart failure.
