(makes 6 servings, 15 min prep)
Ingredients: 1 cup prunes, 1 cup dates, 1 cup almond flour and 1 cup unsweetened dried coconut flakes, 1/4 cup coconut flour. Optional: 1/4 cup gluten free dark or semi-sweet chocolate chips.
- Puree 1 cup prunes and 1 cup dates in a blender or food processor until smooth.
- In a large mixing bowl, combine with 1 cup almond flour and 1/2 cup unsweetened dried coconut flakes. Optional: 1/4 cup gluten free dark or semi-sweet chocolate chips.
- In a small bowl, combine 1/4 cup unsweetened dried coconut flakes and 1/4 cup coconut flour.
- Roll the mixture into balls between the palms of your hand then roll each one in the coconut flakes & flour mixture. Store in the refrigerator until serving.
